Fresh Seaweed*
18 fresh oysters on the half shell**
2 jars Canadian Golden Caviar (1.75 oz. Each)
2 scallions (shallots or green onions), thinly sliced into rings
2 lemons, cut into thin wedges
Spread the seaweed in a flat basket. Arrange the
oysters, in their shells, on the seaweed. Sprinkle each oyster
with 2 or 3 pieces of scallion. Top each one with a dab of caviar.
Serve very cold, accompanied by fresh lemon wedges.
*Seaweed can be ordered from your fishmonger and
is usually free.
**Shuck them yourself or have your fishmonger
do it.
