Whitefish Caviar Pie Appetizer

½ lb  Ripe avocado, mashed

1        Red onion, finely chopped

4        Hard-boiled eggs, finely chopped  

3 oz.  Real mayonnaise

4 oz.  Whitefish caviar

 

Line a 10-inch (25.5 cm) pie plate with mashed avocado. Cover with a layer of onion. Cover with layer of eggs. Spread with mayonnaise. Let sit in the refrigerator for an hour or more.

 

Just before serving, add a layer of caviar. Serve with herb and garlic flatbread, or garlic-flavoured Melba toast.
