Pan-Fry:
Dip fillets in one beaten egg. Coat fillets lightly with fine breadcrumbs
(resulting in darker coloured fillets) or flour. Season with salt
and pepper. Fry in 2 tbsp. oil or butter for 6-7 minutes, turning
twice. (Do skin side first and last for crispy texture.)
Bake in Foil:
Brush foil with 1 tbsp. oil or melted butter. Place fillets on foil
and sprinkle with 1 tbsp. lemon juice. Season with salt and pepper.
Seal and bake 5-6 minutes at 450°F (230°C).
