Serves 8
1/4 lb. Bacon,
diced
1/8 tsp. thyme
1/4 cup flour
1/8 tsp. oregano
1/4 cup onion, diced
8 cups chicken broth
1/4 cup celery, diced
1/2 lb. Smoked sausage, cut into 1 inch cubes
1/4 cup green pepper, diced
1/2 lb. Walleye, cut into 1 inch cubes
1/2 tsp. garlic
1/8 tsp. cayenne
Salt (optional) pepper (optional)
1/8 tsp. white pepper
1-1/2 cups cooked white rice
Sauté
bacon until browned and remove from pan. Heat fat until it begins
to smoke, then stir in flour. Whisk constantly until mixture turns
the colour of a brown paper bag. Add onion, celery, green pepper,
garlic, cayenne, white pepper, thyme, oregano, reserved bacon
and chicken broth.
Cook gently
for 15 minutes. Add smoked sausage and Walleye and cook for 5
minutes longer. Season with salt and pepper (optional) and serve
at once in shallow bowls. Garnish each bowl with 3 tbsp. cooked
white rice.
