Pickerel Fillets/Shrimp in Cheese Sauce
Courtesy of Leslie Smith !

1 lb. pickerel fillets
2 cups fresh shrimp - tail removed (optional)
3/4 cup chopped green onions
1/4 cup water
4 tbsp. melted butter/margarine

4 tbsp. flour
1 1/2 cups milk
3/4 cup parmesan cheese
Salt, pepper, lemon pepper, dill

Grease the bottom of a 9 x 13 baking dish; sprinkle salt, pepper, lemon pepper and dill on bottom of dish. Lay the fillets in the dish and place the shrimp on top of the fillets. Add chopped green onions, cover with 1/4 cup water and a dot of butter or margarine. Cover the dish with foil and bake the fish and shrimp for 20 minutes at 350°.

While the fish is baking, combine butter, flour, milk and parmesan cheese on stovetop and cook until sauce is thickened.

Remove fish from oven and drain liquid from the pan, pour the cheese sauce over the fillets and bake for another 10 minutes. Remove from the oven and let sit for 5 - 10 minutes -- sauce will thicken as it cools.
